What Are Prawns?
Prawns – known in Pakistan as Jhinga (جھینگا) – are one of Karachi’s best-loved seafoods. Several prawn species from the Arabian Sea are sold under the name “prawns” in Pakistani markets, so we grade our prawns by size (count per kilogram) rather than by species name.
Prawns have sweet, delicate meat that cooks in minutes and takes Pakistani spices beautifully.
What Does “20–30 Prawns per KG” Mean?
Prawns are graded by how many whole prawns make up one kilogram. A lower number means bigger prawns. Extra Large prawns are approximately 20–30 whole prawns per kg, counted before cleaning. The exact count can vary slightly with each batch.
Free Prawn Cleaning – Cleaning Options
Standard cleaning is free at Ilyas Fish. Tell us your preferred style in the order notes or on WhatsApp:
- Whole (as is) – head and shell on
- Headless, shell on
- Peeled, tail on – great for grilling and frying
- Peeled and deveined – ready for karahi, curry and rice dishes
- Butterflied – opened flat for grilling and garlic butter prawns
How We Weigh Prawns
Prawns are weighed whole, before cleaning, and the price is per kilogram of whole prawns. Removing heads, shells and veins takes away a noticeable part of the weight, so the cleaned prawns you receive will weigh less than the billed weight. Peeled and headless cleaning removes the most.
Best Ways to Cook Extra Large Prawns
Butter garlic prawns
Sauté peeled prawns in butter with plenty of garlic, chilli flakes and lemon – ready in minutes.
Grilled prawn skewers
Thread peeled prawns on skewers with onion and capsicum, marinate and grill quickly.
Prawn tikka
Marinate in yogurt, tikka masala and lemon, then grill or pan-roast until lightly charred.
Prawn karahi with big pieces
Big prawns stay juicy in a karahi – add them in the last few minutes of cooking.
Whatever you cook, remember that prawns cook fast. They are done as soon as they turn opaque and pink-orange and curl into a loose “C” shape – usually just a few minutes. A tight “O” curl means they are overcooked and will be rubbery.
Quick marinade: lemon juice, garlic-ginger paste, red chilli, turmeric, salt and a little oil – rest for 15–20 minutes, then cook on high heat.
How to Check Fresh Prawns
- Shells are shiny and firmly attached
- Heads are attached and not black or loose
- Flesh is firm, not soft or mushy
- Smell is fresh and of the sea, never ammonia-like or sour
How to Store Prawns
Refrigerate at 4°C or below as soon as they arrive and cook within 1–2 days, or freeze them. Thaw frozen prawns in the refrigerator. Keep raw seafood separate from ready-to-eat food, and cook prawns until the flesh is opaque (63°C / 145°F).
Allergy Note
Prawns are shellfish, one of the most common food allergens. People with a shellfish allergy should not eat prawns.
